Just signed up, and I am returning to the hobby after...well a real long time! I am a builder, not so much of a flyer, in fact I will have to start flying from the beginning, yes its been that long! But in the meantime I want to get a hold of a set of plans for something big and Luftwaffe!

Welcome aboard Mark!
There are a lot of modelers "returning to the fold" so don't feel awkward!
There are a lot of plans for Luftwaffe birds, Nick Ziroli has some, so does Meister Scale, I am sure Brian Taylor has some. You can start looking and getting an idea at Bob Holman's plan service BHPlans
After you look around a bit, let me suggest becoming a site supporter ( LINK) - well worth the investment, and when you start your build thread it makes it so much easier and you will get tons of help!

If you are starting from square one. Apprentice 15e has been a great trainer and any of the Cubs would work well too.
Oh and if you have any 72 MHZ gear remaining, toss all but the servos we do it more reliability now
